Venturing through central London, there is no denying we are in the golden age of pitstop coffee shops. Like everything else these days, speed, convenience and cost efficiency takes precedence over flavour, enjoyment and quality. Science and opulent design are blended (sorry, couldn’t resist) by French artist Jean-Luc Rieutort to produce a modern take on the historic balancing syphon brewer, used by 19th century royalty. Or, in other words, a lavish and fine example of caffeine craftsmanship. The art of brewing coffee is transformed into a ceremony by an automated system using scientific processes of heat, steam and gravity. This may all sound incredibly complicated, time-consuming and impractical, and that’s because, quite frankly, it is. But is it worth it? Absolutely. 

Maria Tindemans from Royal Paris describes the machine as; “An elegant echo of the opulent age of house coffees when only the best was reserved for the rich and famous.” We couldn’t have said it better ourselves.
